The Domaine de Soustres vineyard is located on the slopes of the Oppidum of Enserune. With this unique location overlooking the area, our vineyards benefits from an exceptional microclimate between the Mediterranean sea and the gentle air currents from the Cevennes mountain range.
Before irrigation and drainage of ponds, including that of Montady (with its fields in star, still visible today), the Greeks and Romans had developed their city on the Ensérune Oppidum to enjoy this singular microclimate.
On this "puech" (hill), the land is divided between a sandy plateau summit on limestone subsoil clay and limestone slopes. The vineyard is spread over different plots, where for several decades, we combine terroir and noble varietals to produce ever more qualitative wines.
This association of a site that dominates the area, an exceptional microclimate and terroir, our selected varieties of vines can produce wines that are both rich and well balanced :
• Rosé wines : Grenache and Cinsault based, they have all the freshness of a fruit basket and citrus zest
• Red wines : mainly made of Cabernet Sauvignon, Grenache and Merlot. A beautiful range of wines, Grenache with bright aromas of red fruit, slightly spicy Cabernet and Merlot with toasted notes, great wines, expression of this unique terroir.
