All the more reason to come and visit us in our shop-cellar located in Montady (open Tuesday to Thursday from 10am to 5.30pm).<\/strong>Thanks to the cultivation of olive<\/strong>trees and bees<\/strong>in our undergrowth, and to the know-how of local partners-producers,<\/strong> we can offer you honey<\/strong>, olive oil<\/strong>and olives<\/strong>directly fromthe land of Soustres<\/strong>.And as we are gourmands<\/strong>, this year<\/strong>, we propose jams<\/strong>and confits<\/strong>elaborated by the Chaudron d’Aur\u00e9lie<\/strong> located at a few kilometers from our home.<\/p>\n\n

The label<\/strong> on the products offered in our shop indicates<\/strong> that they are made<\/strong> with all or part of the raw materials<\/strong> from our land and\/or produced by local partner producers.<\/strong> They have all been tasted and selected by our team.<\/p>\n<\/div><\/div>\n\n

The Confits-tures of Aur\u00e9lie’s Cauldron<\/h2>\n\n

One would dream of falling into this cauldron of delights<\/strong> as Aur\u00e9lie’s preparations, based on fruits from the H\u00e9rault<\/strong>, Gard<\/strong>or Roussillon<\/strong>regions, are so tasty<\/strong>and well balanced<\/strong>.Everything is designed to promote short circuits<\/strong> (fruits, jars, labels) and taste<\/strong> (maturity, sugar content, cooking). No standardization in the recipe<\/strong>, the sugar level is adapted to each fruit and at the time of each harvest (measurement of the sugar level with a refractometer) and the jams are made without added pectin<\/strong>. <\/p>\n\n

Have you ever heard of wine confit<\/strong>? It is made from finished wine according to Aur\u00e9lie’s own recipe.<\/strong> It is the singular touch of the cheese platters<\/strong>, the ideal companion of the goat<\/strong>and the ewe<\/strong>in particular. But, it is also the friend of terrines<\/strong>and foie gras<\/strong>, to change a little onion and fig confits. If you wish, you can also eat it as a fruit jelly.Aur\u00e9lie makes these wine confits* with Merlot<\/strong>, Chardonnay<\/strong> and, exclusively<\/strong> for the estate shop, Grenache Gris<\/strong> de Soustres. All the aromatic power<\/strong>of the ros\u00e9 gris de gris concentrated in a confit only available in our store!<\/strong><\/p>\n\n

Aur\u00e9lie’s jams<\/strong> are made from local<\/em> fruit only<\/strong>, bursting with sunshine and respecting<\/em> seasonality<\/strong><\/em> of each of them. She makes them with the help of the <\/em>A “grandmother’s recipe”<\/strong> without pectin, with the sugar content adapted to the ripeness of the crop and without excessive cooking.<\/em><\/p>\n\n\n\n

As you may know, 8 hectares of olive trees<\/strong> are planted around our vineyards.<\/strong> They are maintained<\/strong>throughout the year by Didier<\/strong>, olive grower<\/strong>and operator of the oil mill<\/strong>, “Lo Moulinet”, located in Puisserguier. Three varieties of olives<\/strong> are used to make different products.– table olives with<\/strong> La Lucques<\/strong>, a variety from Languedoc recognizable by its singular crescent moon shape.<\/em>– olive oil<\/strong> with the varieties Picholine<\/strong>, native of the Gard, and Olivi\u00e8re<\/strong>, the most widespread.<\/em><\/p>\n<\/div>\n<\/div>\n\n

In the heart of the Soustre forest<\/strong>, nearly 5 million bees<\/strong> are buzzing, gathering nectar from the flowers of the scrubland<\/strong>. Their favorite flowers are thyme<\/strong>, thistle<\/strong>and oregano<\/strong>. Our beekeeper, Beno\u00eet<\/strong>, has set up his hives in a clearing in the Soustres forest and takes care of our friends the bees. It is especially him, which extracts the invaluable nectar: the Honey of Garrigue.<\/strong> This honey is certified Organic Agriculture.<\/strong><\/p>\n<\/div>\n\n\n\n

You like the design of the honey and jam jars as well the olive oil bottle and you don’t to throw the away.<\/em>One solution, reuse them! <\/em>All are made of glass and closed with hermetic and reusable metal lids and caps.<\/em>Give them a second life! Just give it a quick wash and wipe and you’re done! All you need to do is insert new ingredients for your kitchen such as spices, condiments or to create little boxes for the kids. <\/em><\/p>\n<\/div><\/div>\n\n
