Walk and tasting “Golden Hour” at the Estate
Exceptional walk in the vineyards at sunset with the discovery of the Terroir of the Coteaux d’Ensérune with its breathtaking landscapes (panoramic view at 360°) and the know-how of the Domaine de Soustres with immersion in its vineyard to discover the secrets of the vine and its work.
Refreshing break at the top of the hill in the middle of the vineyards with a glass of effervescent rosé in hand (an exclusivity of the estate) and the phone in the other to immortalize the Golden Hour (the best of the sunset) with panoramic views of the Montagne Noir and the Haut Languedoc.
This walk is followed by a night tour of the cellar and a gourmet tasting of wines from the estate and platters of Lacaune charcuterie and cheeses from Occitanie and Auvergne.

The full program
Visit and Tasting – every day (1h30)
Dive into the heart of winemaking through an immersive tour that will reveal the secrets of wine, its terroir and its history. From the vineyard to the cellar, explore each stage of wine production: grape varieties, vine cycle, influence of the terroir and winemaking process.
Throughout the course, children will also be able to participate in fun and interactive activities, mixing fun and discovery, to awaken their curiosity while learning the secrets of the vine and wine.
To close this experience, let’s go for a tasting! You will discover 5 of our wines for an introduction to tasting, accompanied by local specialties.
For the younger ones or those who do not consume alcohol, a tasting workshop of artisanal syrups will offer them an equally tasty experience.
A sensory and convivial adventure, to live with family or friends!

Golden Hour at the Estate – on Friday

Live a magical moment where nature, wine and gastronomy meet under the golden lights of Languedoc.
From the cellar of the estate, discover the ancestral grape varieties by climbing the plateau of Ensérune. Between vineyards and olive groves, let yourself be enchanted by the beauty of the landscapes: Montady, Mont Caroux and the Black Mountain are offered to you in an exceptional panorama.
At the top, savor the moment while admiring an unforgettable sunset, a glass of friendship in hand. Then, guided by the glow of the lamps, descend through the fragrant pine forest before diving into the universe of wine during a night visit to the cellar.
Finish this experience with a tasting of our wines, accompanied by local specialties for a gourmet and friendly immersion.

Recommendations: closed and comfortable shoes, bottle of water (it can be hot), sunglasses and cap.

Les Rendez-vous Gourmands

On the same principle as our Golden Hour walk, live an even more immersive experience, enriched by the presence of a specialized guide. This exclusive edition, designed with the BAO Guide, takes you to the heart of vineyards and olive groves at sunset, to discover the history of wine in Ensérune during ancient times.
Along the way, our guide, Anaïs, will explore the theme:
«Wine, from a wild drink to a divine elixir – How Gauls and Romans saw wine in Ensérune?»
You will discover:
- The arrival of wine in Ensérune and its local origins (grape varieties, techniques…),
- Its different uses: cultural, gastronomic, etc.,
- A final tasting illustrating how wine was consumed and associated with dishes at the time.

Les Sensorielles – 23 July, 6 and 20 August
(summer evenings)
Sit comfortably in the courtyard of the estate, arranged for the occasion, and enjoy a friendly and relaxing atmosphere under the soft glow of the guinguette lights. Each event promises you a unique experience, designed to amaze you.
On the program, a live show for you to dive into the heart of the action with professional artists – storytellers, dancers, musicians, circassians or actors. A culinary experience with a menu specially designed for each evening. An artistic journey to discover the works of artists exhibited in the magical atmosphere of the cellar, between painting, photography and sculpture. And to finish, the discovery of the cuvées, the team of the domain accompanies you in the tasting of our wines, with each evening a cuvée put in the honor and told with passion.

Share a moment with your children using the activities set up throughout the visit and tasting.
A discovery of aromas through the square of aromatic herbs placed at their disposal in front of the cellar (smell, touch) and illustrated panels along the visit route to allow them to understand more easily the development of wine.
For the tasting, we reserve a unique experience for them!
A blind tasting of drinks flavored with natural fruit syrup, each corresponding to a main aroma of the wines you will taste.
For each of the activities, a notebook of ‘the apprentice winemaker‘ will be made available to them to test their knowledge throughout the visit.

Tasting of custom-made wines
Come and test the different vintages of the estate during a guided tasting of our wines. It is up to you to establish the tasting program according to your preferences.
These tastings can be accompanied by local appetizers (savoury biscuits from Histoires Gourmandes and Olives from Lou Moulinet) and/or a cheese platter selected from the Fromager Company (Montady).

Labels
Vignobles et Découvertes (Vineyards and Discoveries)
The ‘Vignobles & Découverte‘ label is awarded by Atout France following a recommendation from the Superior Wine Tourism Council. This is allocated to tourist and wine-producing destinations offering a range of multiple and complementary tourist products. For the Domaine de Soustres, it is about the diversity of products (several types of wines, olives, olive oil and honey), wine tours and various events at the cellar.
The label responds to a management and an award procedure that are governed by a usage regulation.

Qualité Tourisme Occitanie
The quality label highlights our uniqueness, our know-how and our soft skills in your customer experience. It consists of having a good involvement of the staff with a demanding mindset and having a place suitable for everyone to ensure you are well received and followed during your visit (disabled access, games for children, hiking).
